Sweet & Sour Stir fry!

Sweet and Sour Chicken Stir-Fry

Ingredients

1 tablespoon cornstarch
1/4 cup cold water
1 8 ounce can pineapple chunks, drained and juices reserved
3 tablespoons ketchup
1 tablespoon soy sauce
2 tablespoons brown sugar
1 teaspoon rice vinegar

3-4 teaspoons vegetable oil, divided
1 pound boneless, skinless chicken breast or thighs diced into 1 inch pieces
(you could also use pork tenderloin, or sliced boneless pork chops)
1/2 teaspoon kosher salt
1/4 teaspoon black pepper
2 garlic cloves, minced
1 tablespoon minced fresh ginger
3 cups broccoli florets
1 medium bell pepper, stemmed , seeded, and cut into 1/2 inch squares*
hot cooked white or brown rice

*In this post, I used half of the bell pepper, and added 1/2 of a diced onion as well

Instructions
Start cooking your rice so it will be ready.

Combine cornstarch and water in a medium sized bowl and stir to dissolve. Add the reserved pineapple juice*, ketchup, soy sauce, brown sugar, and vinegar to the bowl and stir to combine.

*If you’re using a stainless steel pan, save pineapple juice for de-glazing it

heat 2-3 teaspoons of the oil in a wok or large nonstick skillet over medium-high heat. Add the chicken, salt, pepper, garlic, and ginger. Stir-fry until the chicken is cooked and no longer pink, 3-4 minutes. Remove chicken from pan and cover to keep warm.

Add the remaining 1-2 teaspoons oil to the pan and add the broccoli and bell pepper. Stir-fry over medium-high heat until the vegetables are crisp-tender and the broccoli is bright green, 3-5 minutes.

Return the chicken to the pan and add the pineapple chunks and sauce mixture. Bring to a simmer and cook until everything is heated through and the sauce has thickened, 1-2 minutes. Season with additional salt and pepper to taste. Serve over the hot cooked rice. If desired, top with sesame seeds and chopped fresh cilantro or parsley.

Serves 4 (or more like 6 if you’ve got some kiddos in the mix

Spring!

Our little easter bunny!


I love Spring! and I love easter! I love when the weather is just starting to get warm and all the flowers start to bloom...yah right who am I kidding!!! not in Calgary! lol maybe in Vancouver where I grew up but not here....we are still getting snow! Even though this week the sun is starting to come out none of my flowers in my garden have bloomed yet and I'm patiently waiting because I have a huge garden/patio and I want to do some gardening....hopefully soon. I'm now on week 10 of being off work due to my sickness and I tell ya I start to get really bored and I have all these projects in mind that I need to start working on. I'm working on a baby blanket right now but I do want a sewing machine because I much rather sew than crochet.

My mom came to visit us over Easter weekend and we went down to Lethbridge for easter dinner at Ryan's aunts house. I was doing pretty good until sunday morning I woke up with a sore back...thought I just slept funny but I guess I was wrong. The pain started to get worse and worse through out the day and up until last night I had done everything possible to take care of the pain (ice, heat, stretching, etc.) and nothing was helping so I decided to call my nurse last night and told her I was having constant pain in my hip/lower back when I walk, stand, sit, etc. she wanted to see me right away so I went in this morning and she examined me and I literally wanted to die! She said it is common to have back pain during pregnancy but because I injured my back a few years ago it's going to be a lot more painful for me. I kinda knew my injury would cause some sort of back problem during my pregnancy and I was right. Plus i'm carrying really low so that doesn't help much. So I have to go see a chiropractor and get some massage done which I'm okay with. So for now i'm resting a lot! which I already was anyways but now I'm in constant pain. If you've ever had a back injury you understand. It's painful.

Besides that I am getting huge....fast. And despite all the physical stuff I've been going through with this pregnancy....I think pregnancy is the most amazing experience! I couldn't feel more blessed to have this little baby growing inside my tummy and feeling the bond between mother and child. It's pretty amazing and I love it!

Did I mention Ryan only has 2 more weeks of school left then he's off for the summer! Wahooo! I can't wait! and I can't wait to move!!! starting to look for a place and hopefully moving next month or June. I gotta get out of this depressing cave of a basement.
